Here at Fourteen Magpies Handmade Jams & Preserves we’re practicing the age old art of micro-canning. This is where each batch is lovingly produced by hand, in very small quantities. Depending on the fruit or vegetable, a typical batch yields 18-24 jars. For most small artisan jam makers, this micro-canning method ensures each pound of produce from a specific orchard or garden is canned as quickly as possible to literally preserve its fresh-from-the-earth characteristics.
